Creamy broccoli soup with no cream, 5 ingredients [whole food, plant-based, vegan]
This is how I make a creamy broccoli soup without cream and vegan substitutes, from scratch.

- 1 broccoli small
- 1 carrot large
- 2 tbsp cashews heaping
- 1 onion small
- 2 cloves garlic
- 3 cups water
- salt to taste
Divide the broccoli into florets, cut the stalks into smaller pieces, and cut the carrots into rounds. Add to a pot.
Peel and quarter the onion and add it to the pot. Also, add the peeled garlic cloves and cashews.
Add water, cover, and bring to a boil, then cook for 10 minutes.
Blend the soup with an immersion blender or in a blender suitable for blending hot liquids. Add salt to taste.
Transfer back to the pot and cook for another 5 minutes, stirring occasionally.
Serve with bread or as an appetizer. I like to garnish it with unsweetened soy yogurt.
